"The 2021 Clos de Sarpe is showing beautifully, offering up aromas of wild berries and plums mingled with subtle hints of petals, loamy soil, spices and pencil shavings. Medium to full-bodied, seamless and velvety, with powdery tannins, lively acids and a penetrating finish, it shows considerable promise. Maylis Marcenat reported that the vineyard was spared by both frost and mildew but fell victim to poor pollination at flowering, delivering low yields. In the winery, she opted for a long maceration at a very low temperature of merely 23 degrees Celsius for a judicious extraction, and that approach appears to have paid off handsomely."

Château Clos de Sarpe is an exceptional wine with a limited production of around 10,000 bottles per year.
The blend is always identical, 85% Merlot, 15% Cabernet Franc.
The Château Clos de Sarpe vineyard covers 3.7 ha in one block, planted on the clay-limestone Sarpe plateau (on Asteria limestone), with a south, south-east exposure at the heart of the greatest terroirs of the appellation. Château Trottevieille, Château Troplong-Mondot, Château Haut-Sarpe, Château Sansonnet, etc.
An organic philosophy since 1923. Since acquiring the estate, the choice has been made to move towards organic farming: at Clos de Sarpe, no pesticides, herbicides or chemical weedkillers have ever been used!
This underlying limestone rock plays an essential role in water supply, providing drainage in wet periods and returning water by capillary action in dry periods.
The water supply to the vines is often very regular and controlled, which is a guarantee of quality and regularity of production (grapes).”

This terroir also gives the wines their low pH, a guarantee of their conservation over several decades.

To obtain this inimitable red fruit taste, we harvest when the grapes are perfectly ripe. The grapes are then meticulously sorted and only the perfect berries go into making the first wine. Winemaking is gentle, so that only the noble tannins are extracted.
Ageing by plot in French oak barrels, 70% new barrels and 30% 1-year barrels.
The wine is not fined on blending and not filtered before bottling.
